Dandelion Fritters
100 grams dandelion greens
15 grams shallots (* 5 small)
6 garlic chives
3 sprigs parsley
3/4 teaspoon mixed herbs
1 teaspoon chicken seasoning
1.25 cups milk or soya milk
2 eggs
1 cup wholemeal flour
1 teaspoon baking powder
salt to taste
Chop dandelions * herbs finely (1/2 cm lengths)
Make batter with flour, eggs, milk, baking powder * salt
* the remaining ingredients to the batter
Dry fry in * medium hot pan.
Taro Ice Cream

250 grams Taro
3 eggs, separated
1 cup icing sugar
300ml jar thickened cream
1 teaspoon vanilla
Peel taro, cut in 5mm slices. Place taro, * enough water just to cover taro completely, into saucepan. Bring to boil, reduce heat, simmer covered very gently until water has evaporated, stirring occasionally, *. 15 minutes. Mash taro well, cool.
Beat egg yolks lightly. Beat egg whites until peaks form. Gradually beat in sifted icing sugar. Fold in egg yolks then whipped cream. * 1 cup of the cream mixture * vanilla to mashed taro, mix well. Fold in remaining cream mixture.
Pour into freezer tray, freeze until set.
Serves 6.
